The rediscovery of spelt, an ancient grain first cultivated more than 10,000 years ago in the Near East, represents a conscious return to healthy and sustainable eating. Its characteristics make it particularly well suited to organic farming: it requires little fertiliser and adapts extremely well to different growing environments.
From a nutritional point of view, spelt offers important benefits. It is rich in protein, vitamins and monounsaturated fats, and its flours are known for their hypoallergenic properties. Its versatility in the kitchen makes it suitable for many preparations, from pasta and baked goods to cakes and traditional breads.
Although its cultivation is still limited today, international interest in this grain is growing, from North America to Europe, with initiatives promoting both its cultivation and consumption.
Rediscovering spelt means rediscovering the authentic flavour of simple, genuine food, with careful attention to health and respect for the environment.
Our farm has enthusiastically begun producing organic spelt of the Triticum Dicoccum variety, focusing exclusively on a short supply chain. We have chosen to promote a sustainable and transparent farming model that creates direct contact between producer and consumer. Our products are sold directly on the farm or through selected retailers involved in Tuscany Region projects promoting high-quality local produce. Our spelt is grown using farming practices that respect the environment and the local area, ensuring a genuine, traceable product deeply rooted in Tuscan tradition. Supporting this approach strengthens the local economy and helps spread a more conscious food culture.

Uses in cooking:
It is ideal for anyone looking for a more rustic and digestible alternative to wheat flour. It can be used for:
-
Bread and focaccia (best mixed with other flours for more effective rising)
-
Rustic-style cakes and biscuits

Homemade fresh pasta
-
Crêpes and flatbreads
Tip:
It has a lower gluten content than common wheat, so when making leavened dough it is advisable to add a proportion of type 0 flour to improve elasticity.

Soups and broths (for example, Tuscan spelt soup with pulses)

Cold salads (such as spelt with cherry tomatoes, feta and olives)

As a substitute for rice in risottos (“farrotto”)
-
As a warm side dish instead of potatoes or rice
Tip:
It does not need soaking. It cooks in about 30 minutes and is also delicious simply dressed with olive oil and Parmesan cheese.
